Simple, creamy, and so satisfying—this potato broccoli salad might just be your new favorite side dish.
What Makes This Potato Broccoli Salad So Good?
After dropping my daughter off at daycare,
I spotted a lonely potato and half a head of broccoli in the fridge.
With a bit of creativity and just a few pantry staples, this potato broccoli salad came to life!
The texture is a perfect contrast:
- soft, warm potato
- lightly steamed, crisp broccoli
- and a creamy soy mayo dressing to tie it all together.
It’s filling, flavorful, and takes just 5 minutes of hands-on time.
